Honey Mustard Dressing

1/2 small wine glass of olive oil or sunflower oil
1 espresso spoon of honey
3 espresso spoons of mustard

I usually make my Honey Mustard Dressing in a small wine glass. First, I fill it about halfway with olive oil. If you are out of olive oil it can be replaced with Sunflower Oil (Canola is made from sunflowers). Then, I add one expresso spoon of honey and three espresso spoons of mustard. We use sugar-free mustard. Yep, that's right, most mustard has sugar in it. Odd thing, in France, it is usually the cheaper, generic brands which do not contain sugars or artificial sweeteners.

Mix the ingredients together until the oil has completely blended in with the honey and mustard.

You can use any kind of mustard you like. It's even good with a cheap yellow mustard. Today we made it with a generic mustard seed dijon mustard with no sugar added.

If you add more mustard, the dressing will have a stronger taste of mustard. If you add more honey, the dressing will taste sweeter. When I add too much oil my daughter thinks it tastes too rich and doesn't want to eat it. You'll find the exact mixture that works best for you and your family with just a little trial and error... or by taste testing!

You can refrigerate the dressing for days. it will not separate once blended together.
